Choc-Chai Bliss Balls

Choc-Chai Bliss Balls

GF, DF, RSF 

Ingredients:

  • 2tbs Destiny’s Chai
  • 2 cups raw cashews
  • 2 cups pitted dates
  • 2 cups shredded coconut
  • 5tbs raw cacao powder
  • 1/3 cup melted coconut oil

Method:

  1. Using a food processor, blend the chai mix until finely chopped (it will gradually combine as you add the other ingredients).
  2. Add cashews, blend together until well combined and finely chopped.
  3. Add dates, blend for approximately 30 seconds.
  4. Combine all the remaining ingredients and blend together for approximately 1 minute or until your desired bliss ball texture!
  5. Prepare a plate or tray with baking paper (whatever will fit in your freezer!), roll a heaped tablespoon of mixture in the palm of your hands and place on the baking paper. Continue until all bliss balls have been rolled and then place into the freezer to set.
  6. Store in a glass jar or airtight container and keep in the freezer or fridge.
  7. Enjoy a choc-chai bliss ball with a brewed cup of chai. Ideal afternoon tea moment to slow down or to be shared with friends!

 

 Spiced Chai Overnight Oats 

Spiced Chai Overnight Oats

 Ingredients:

  • 1tbs Destiny’s Chai
  • 1 cup milk (of choice)
  • 1 cup old fashioned rolled oats
  • 1 tsp vanilla extract, optional
  • 1tbs honey or pure maple syrup, optional

Method:

  1. Place one cup of milk with one heaped tablespoon of Destiny's Chai in a small saucepan. Stir on low heat over the stove for 6-8 minutes or just before it simmers. Strain your brewed chai into a glass jar (large enough for both brewed chai and oats).
  2. Adding in the (optional) vanilla extract and sweetener of choice, stir through old fashioned oats until well combined.
  3. Close the lid of the jar and refrigerate for at least 4 hours, but preferably overnight, before eating.
  4. Serve as a healthy breaky bowl and use your spiced chai overnight oats as a base for any delicious creation! In this bowl, we have sliced banana, strawberries and blueberries. A dollop of yogurt, chia pudding and granola, drizzled with honey!

 

Chai Spiced Banana Bread

Chai Spiced Banana Bread

Ingredients:

  • 2tbs Destiny’s Chai 
  • 3tbs boiling water
  • 3 large ripe bananas, mashed
  • 2 eggs
  • 2tsp pure vanilla extract
  • 2tbs pure maple syrup
  • 2 cups almond flour
  • 5tbs gluten free self-raising flour
  • ¼ tsp sea salt
  • ¼ cup melted coconut oil
  • 1 cup walnuts, optional
  • ¾ cup dark chocolate chips, optional

Method:

  1. Preheat the oven to 180 degrees and line a 9" x 5" loaf pan with baking paper. 
  2. In a small bowl brew Destiny’s Chai with the boiling water and allow it to seep while continuing the following steps.
  3. Using a mixing bowl simply mash the bananas, whisk in the eggs, pure maple syrup and vanilla extract. Proceed to mix in all the remaining ingredients. Strain the concentrated Chai mix and stir through the batter until well combined. Add walnuts and dark chocolate chips through the batter, leaving a small handful to place on top.
  4. Pour banana bread batter into the prepared loaf pan and use a spatula to spread the batter into an even layer. Sprinkle remainder walnuts and dark chocolate on top.
  5. Bake for 45 minutes on the center rack of the preheated oven, until the edges of the bread are golden-brown and a knife comes out without wet batter. Remove from oven and allow bread to sit another 10 minutes. Place on a rack to cool or eat right away! Store in an airtight container once completely cooled.
  6. Serve banana bread with yogurt and berries, enjoyed anytime of the day and especially when shared with friends and family!

 

Raw Choc-Chai Cheesecake

Ingredients:

Base 

  • 1 cup almonds 
  • 1 cup dates 
  • 1/2 cup shredded coconut 
  • 1 teaspoon ground cinnamon 
  • Pinch of salt 

Filling 

  • 2 tablespoons Destiny’s Chai 
  • 3/4 cups boiling water 
  • 2 1/2 cups cashews (soaked overnight) 
  • 1/2 cup cacao powder
  • 1/3 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons lemon juice

Icing 

  • 1/4 cup melted coconut oil 
  • 1/4 cup maple syrup 
  • 1/4 cup cacao powder 
  • 1/4 teaspoon ground cardamom 

Method:

  1. Scoop two tablespoons of Destiny’s Chai into 3/4 cup of boiling water. Mix together and allow it to brew into a strong concentrate while you make the cheesecake. 
  2. Using a high speed food processor, blend all base ingredients together until it forms together well enough to press into a pie/cake tin of your choice. Place into the freezer to chill. 
  3. Meanwhile, strain your soaked cashews and blend on high speed until finely chopped. Strain your Destiny’s chai concentrate and add the liquid to the cashews as well as all other filling ingredients to the food processor. Blend until smooth (it took me about 4-5 minutes of blending, stopping each minute to scrape down the sides). 
  4. Using a spatula, evenly spread the cheesecake filling onto the base and return it back to the freezer. 
  5. To make the icing, simply add all ingredients into a bowl and whisk until smooth and glossy. It will naturally thicken as the melted coconut oil cools down. 
  6. Using the same whisk, have a good time flicking the chocolate icing over the cheesecake - spread it evenly. Make a spider web. Make a Mandela pattern. Make it your own ✌🏽 
  7. Freeze your cheesecake for approximately 4hours and keep it stored there until you’re ready to eat it!
